I've installed previous version on toaster ovens with barely enough RAM and storage for the first VM with minimal issues. RAM is probably your biggest problem. Just try to scrounge up or frankenstein a laptop and give it a try. If you're going to purchase a new laptop, you probably want a solid business model with a common CPU and Network card just to be safe. I tried this before and could not get it to work because of the hardware especially the NIC's.
I have it on work station and have no issue with it. I also installed vCenter on the workstation and this works fine also. It'll probably install, but remember ESXi isn't something you use at the console, so there's not much use from it on a laptop. If you don't have anything else to try it on, go for it.
I've never had a problem grabbing a desktop to try it on, the NIC will probably be the biggest factor. An Intel should be fine; some of the cheap stuff may not work. I assume you're doing this for testing, training or demo purposes, not a production system, right? It is a good idea, but it brings funny though.
